When running a commercial kitchen there is now an industry standard which you need to keep your kitchen in line with by law, in order to avoid hazards and danger to the general public and your employees.


There is a specific publication in place to make these guidelines easier to understand. This booklet is known as the TR19.


Since the introduction of the TR19, it is now a lawful requirement tyou are required to present a document showing that your kitchen has been cleaned to the standard required. The law  requires this document to be presented to your insurance company.


Some of the areas which are covered in the cleaning process of a TR19 include all of the ducting, which is required to be cleaned to a point where the whole system is free from grease along the ducts, that exceeds a thickness of 500mm, this is to prevent fire risk due to the heat, airflow and flammability of the grease in a kitchen. It is vital to make sure the grease does not exceed this thickness.


Over time your extractor fans will build up dust and grease deposits which can cause problems not only will the ducting be affected, but your entire premises can become a health hazard due to the air not being extracted properly, and to the levels required.

Allowing build up of these hazardous materials means the clearance of the fan blades is significantly reduced between the blade edges and the inner casing.

The dust and grease combined forms a thick layer which over time builds up reducing the blades gap over time.This will slow the fans rotation per minute to what can be a significant  amount which will also put pressure on the motor, thus reducing it's lifespan considerably.


Other problems such as the air not being able to escape will eventually result in absorbation by the walls and ceilings, which can end in discolouration, causing mould build due to the dampness.


If a fire breaks out in your kitchen area through non maintenenace of expert cooker hood cleaning and the connected ducting and you are not able to provide a TR19 to certify that your kitchen has been cleaned to the correct standard, you could be deemed liable for any persons involved in the fire. This could result in prosecution, loss of business, large fines, and even imprisonment if the damage is life threatening.
